Oatmeal Chocolate Chip Cookies

Whitney's new little sis in the sorority likes oatmeal chocolate chip cookies. One day of this upcoming week is baking day where they give new little homemade cookies. Since she doesn't have a kitchen in her room I decided to be nice and make them for her. She was down for about an hour today getting a few other things so I was baking when she came through the door. These are pretty tasty.

Oatmeal Chocolate Chip Cookies

1 1/2 cups brown sugar
1 cup butter softened
1 tsp vanilla
1 egg
2 cups quick cooking oats
1 1/2 cups flour
1 tsp baking soda
1/4 tsp salt
1 cup semisweet chocolate chips

Heat oven to 350. In large bowl stir brown sugar and butter until blended. Stir in vanilla and egg until light and fluffy. Stir in oats, flour, baking soda and salt. Stir in chocolate chips.

Drop dough onto parchment lined cookie sheets. I used a ice cream scooper to keep them evenly sized. Bake 9-11 minutes or until go,den brown. Cool slightly, remove from cookie sheet to wire rack.

This made about three dozen cookies for us.

  2. Those are a favorite around here. We use our basic oatmeal cookie recipe [makes a zillion!] and add in all different add ins. Chocolate chips are a fav as our white chips, nuts, dried cranberries, dried apples or apricots.

    You are a nice Momma. :)

  3. PS our recipe has cinnamon in it. Delcious! Oh and dried apples, nuts and applesauce are good add ins together. :)
